Our Solway Firth Rope Hung Smoked Salmon.
A Long Sliced Side of Cumbrian Rope Hung Smoked Salmon weighing 1kg approx from the awarding-winning food artisan company - The Old Smokehouse.
Long sliced means: These are sliced horizontally across the whole length of the salmon fillet. Pre-sliced long cut sides are whole fillets of Smoked Scottish Salmon including skin. After carving, the slices are carefully reassembled to retain the visual impact of a complete side.
The process and method of 'Rope Hung Smoked Salmon' is prolonged, compared to the smoking of conventional smoked salmon. First, it's smoked for about three times as long. Second, in the kiln it's hung "loose" to ensure every square inch of the surface is exposed to the smoke. And third, the wood chips used for the smoke are from retired whisky barrels. All this delivers a smokier and slightly drier result, arguably a bit sweeter owing to the whisky effect.
