Our collection would not be complete without a wonderful Cumbrian offering. A lovely rich cake, not as heavy as the rich Christmas Cake or as light as the Dundee Cake, this bake has a little added spiciness created by the addition of pepper. The effect is very pleasing. Although traditionally served plain, we do enhance the cake with the addition of a glazed fruit topping.
